The Brazilian microlot from Ellen Fontana's Fazenda Fronteira farm owes its uniqueness to the Natural Cherry processing method.
In the Natural Cherry method, the hand-picked and sorted coffee cherries are dried on concrete terraces and, once dried, their residual moisture is consolidated by mechanical fans. The sweetness of the pulp is thus transferred to the coffee beans, resulting in a truly distinctive fresh taste with hints of nuts.
