Originally, tea was grown at high altitudes in the Fujian region. It is said to have got its name from the monkeys that were specially trained to harvest this tea. Today, it is consumed several days a year by human hands.
The infusion has a light green colour with a subtle hint of honey flavour.

Tea preparation:
1 small teaspoon of tea per cup. Pour the tea into a strainer or directly into a cup and pour 80-90°C water. Allow to infuse for 3-5 minutes. Then remove the strainer or pour off. Higher water temperatures or longer steeping times will cause the tea to turn bitter. You can make more than one infusion from one quantity.
