This variety from the Fujian region is one of the best known and most popular white teas and in the past it was a staple of the imperial court.
The tea leaves are open and the drink has a pleasant delicate taste.

1 small teaspoon of tea per cup. Pour the tea into a sieve or directly into a cup and pour 80-90°C water. Allow to infuse for 3-5 minutes. Then remove the strainer or pour off. Higher water temperatures or longer steeping times will cause the tea to turn bitter. You can make more than one infusion from one quantity.
