This coffee comes from the Yirgacheffe region, which is world famous for coffee growing. The high altitude and long family history of coffee growing provide all the necessary conditions for growing great coffee. Yirgacheffe coffees are distinguished by their lemony acidity, floral notes and light body.
In Yirgacheffe, most farmers grow coffee in small farming groups. Rather than uneconomically processing the coffee with their own machines, they join together in smaller groups and process their beans together around a local washing station, the cherries are picked and carefully sorted. Biri Chereka's coffees are processed using the 'washed method'.
