The Al Hayma region is located near the city of Sana'a at an altitude of over 2,000 metres. This region has less greenery and less rainfall than other coffee growing regions in the world, and due to these harsh climatic conditions, the ripening of the coffee plants is slower and the harvest is later than elsewhere in Yemen.
Very little coffee is produced in the Al Hayma area - most plantations harvest 15 tonnes of coffee cherries, which provides about 1.5 tonnes of beans per year. Although production is small, the quality of the beans is very high. Farmers take great care of their coffee trees, each coffee cherry is hand-picked when fully ripe. Once the coffee cherries are harvested, they are transported to the Sheba processing station where the cherries are sorted in an ice bath. After cleaning, the cherries are placed on raised beds for 2 to 3 weeks, where they are turned over daily to dry evenly. Once the humidity drops to 11-12 %, the cherries are placed in airtight bags to protect them from oxidation and microbes. The cherries are then left to rest for 2 to 3 months before being stripped of their dried flesh. After shelling, the grains are passed through a sorter, sieved according to grain size and then hand-sorted to remove any defects.
The whole intricate process creates a very complex coffee taste full of juicy notes of strawberries, blueberries with subtle floral notes.

Wholeness, complexity and fullness, that's how you can describe the current roasting of Yemen. It brings with it a pleasant acidity of wild strawberries, cranberries and blueberries, similar to what we know from Ethiopian coffees. The body is creamy chocolate with a hint of cocoa bitterness and the after taste mellows the resulting flavour into honey-floral notes.
