The flowers of the Clitoria ternatea plant are known for their miraculous effects as Butterfly pea tea. The tea is a unique blue colour when leached.
The color changes according to the pH of the liquid, clitoria tea combined with a few drops of lemon is a very dark purple.
It is used in Ayurvedic medicine and in confectionery products
Ingredients:
67% Clitoria ternatea (Butterfly Pea Flower, sblue-pea, Aprajita, Cordofan pea, Asian pigeonwings)
Preparation:
1 small teaspoon of tea per cup (200 ml). Pour into a sieve or cup and pour 95°C water. Allow to infuse for 15 min. Rinse for 15 minutes.
